Origami to Astonish and Amuse by Jeremy Shafer, 251 pages, 89 models,  ISBN: 0-312-25404-0.

Has a good 8 page guide to basic folds.

There's a "Thoughts Behind the Folds" section for pretty much all the models. I really enjoyed those, especially the exercises and challenges that'll make you think about the models.
